Fruit Cobb Salad + Avocado Dill Dressing

I know it's been a while, since I've posted a good food post on the blog, but I promise I've been eating.   It's just that while pregnant, I've been eating a lot of the same things (blame it on cravings), eating out (blame it on being tired) or my husband has been cooking dinner + frankly I haven't felt like photographing it.  Then last week, a good friend of mine posted this delicious looking salad she had made + I knew I needed to make a version to share with all of you here.  Finally, food inspiration was back.

The salad my friend posted, was a fruit cobb salad, fully equipped with dill flavored feta + blue cheese, both two things I can't have while pregnant. So I started brainstorming on what I could add, to make this fruit salad my own.  I knew I wanted to incorporate the dill, then I thought, what about a creamy avocado dill dressing? Genius, right! Well, I think so.

Now, I have to admit, I hate making salads at home... I just feel like I can never make it as good a someone else.  But this salad, changed all of that.  This fruit cobb salad was absolutely amazing + the dressing... OMG, you must try it for yourself to believe me.  I promise, you wont be disappointed, unless of course you don't like avocados, which if that's the case, how are we friends?  Kidding... but no really, how do you not like avocado? lol

Fruit Cobb Salad with Avocado Dill Dressing

Ingredients: 

Dressing-

  • 1 avacado
  • 1/4 fresh copped drill
  • 2 fresh squeezed lemons
  • 2 tablespoons of EVOO
  • 1/4 water
  • 2 teaspoons of salt
  • 1/2 tablespoon of honey

Salad-

  • 1/2 head of butter lettuce
  • 4 large strawberries
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  • 1/4 cup blackberries
  • 3 pieces of bacon
  • 1 hard-boiled egg
  • Fresh Dil, Salt + Pepper for garnish

Directions: 

Dressing-

Add avocado, lemon juice, honey, EVOO + water to a food processor.  Mix until smooth.   Add salt + dill.  Mix until fully combined.  Place in an air tight jar + set in fridge.  Will stay fresh for about a week. To make the consistency thinner, just add more water, but keep it to no more than 1 tablespoon at a time. Makes 2 servings.

Salad-

Line bowl with butter 3-4 lettuce leaves, tear up the rest of the lettuce into smaller bite sizes + place in bowl.  Slice strawberries.  Place all berries in salad.  Slice hard boiled egg in half, place in salad.  Break bacon into pieces + crumble over salad.  Garnish with dill, a dash or salt + pepper and drizzle with dressing.
