Gluten Free Cheddar Waffles Recipe

A few nights ago, I had a craving for Chicken & Waffles… not just any waffles but savory waffles and of course they had to be gluten free. Now normally, I like taking short cuts and would’ve reached for a gluten free waffle mix, but all we currently had on hand was pumpkin gluten free waffle mix from Trader Joes – amazing on it’s own, but not what I had in mind when I said savory. So I decided to try these from scratch. I checked out a few different recipes and ended up with this combination, using gluten free all-purpose flour, also from Trader Joes – IMO the best, I’ve tried many.

These waffles are savory, flavorful, fluffy and delicious! Of course you could use any regular all-purpose flour, which would make these not gluten free. But if like me you are gluten free, this is a recipe I highly recommend.

Ingredients:

  • 1 cup all-purpose gluten free flour (my favorite is the Trader Joes brand)

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup yellow cornmeal

  • 1/4 cup cornstarch

  • 1 tsp salt

  • pinch of black pepper

  • 2 large eggs

  • 4 tbsp melted butter

  • 2 cups buttermilk

  • 3 oz  sharp cheddar

  • 1/3 cup chopped chives

Directions:

Combine flour, baking soda, baking powder, baking soda, yellow cornmeal, cornstarch, salt and black pepper in a large bowl.

In a medium bowl add eggs and buttermilk and stir throughly. Stir in melted butter. Stir in sharp cheddar and chives. Pour into flour mixture and combine throughly.

Heat waffle maker on medium high. Spray with olive oil and cook as instructed.

*You can save leftover batter in an airtight container in the fridge for a few days.

Recommended Pairings: runny eggs and bacon or air-fried chicken and hot honey!
