Beet Almond Milk Latté Recipe

If you’re new around here, let me tell you a little something about two things I love – lattés and a good theme. Matcha and Mushroom Coffee Oat Milk Lattés are my go-to’s but I’m always down to try something new. With Valentine’s Day just a few weeks away, I wanted to make something festive, yet healthy, for the boys and I to enjoy (insert Beet Latté here) . Valentine’s Day is all about Pink + Red, bold and colorful and filled with love and a pink beet latté is the perfect warm drink, to fit that theme.


Since the pandemic, one of the things I miss most, is hanging out in my favorite cafés. I used to love lingering in cafés for hours before kids and then once I became a mom, so many of my favorite memories with my boys, involve some of our favorite cafés. One memory in particular that comes to mind (which literally just hit me as I was writing this post), is the last date I took Jayden on after a school field trip. It was February 27th, 2020 and we had the best day. A field trip with Jayden’s class to Staten Island College, where we watched a performance of “Caps for Sale”. We rode the bus together, I got to sit and see him interact with all his friends and after we got back to the school, his teacher suggested I take him home early so we could enjoy the rest of the day, since all that was left was lunch and nap, so we did. We were both hungry and so I decided to take Jayden to a cafe which I had been meaning to check out for the longest time– the cutest place in Jersey City, Hybrid Coffee & Kitchen. It’s crazy to think back and realize that this moment was one of our last normal moments, one of our last normal days, before the world was flipped up side down. Just two weeks later was Jayden’s last day of school, before quarantine and he hasn’t returned to a school setting since. WOW!

Yup, I’m crying now… while I’m so grateful, it’s just so crazy to think how quickly life changed and how much we have been through since then and how much I miss those old moments and all the moments we have missed out on since... I also know I am not alone in these feelings and that ultimately we are so blessed.

Back to our café date… I had soup and an oat milk matcha latté and Jayden had a huge waffle with berries and a huge beet latté. That day was when Jayden had a beet latté for the first time and for weeks, all he talked about was that tasty pink drink. Since getting a Vitamix for Christmas, I now had the perfect reason to finally attempt to make one. I did a little recipe testing this past weekend, to get the taste just right and this recipe sure does deliver. I mean, who can resist a pink latté?!? …but especially one that taste this good.

Beet Latté Recipe

Ingredients–

  • 1 small beetroot

  • 1/2 tsp vanilla extract

  • 1/4 inch fresh ginger

  • 1/2 tsp ground cinnamon

  • 2 cup Almond Breeze Hint of Honey Vanilla Almond Milk*

*First time trying this and its amazing and so perfect for this recipe. Slightly sweet but not overpowering and pairs so well with the beets. With this almond milk, you don’t need to add additional sweetener. If you cant find, using regular unsweetened almond milk and add 1 tsp of Honey.

Directions–

  • Bring one pot of water to boil.

  • Add beets* and boil for 5 mins then reduce heat to a simmer and let sit for 30 min.

  • Drain beets, let it cool for 15 minutes and peel.

  • Add beets, vanilla extract, ginger, cinnamon and almond 1 1/2 almond milk to Vitamix (currently on super sale) and blend on high speed for about 5 min.

  • Froth remaining milk separately.

  • Pour beet latté into cup and top off with addition frothed almond milk. Stir and enjoy.

*You only need one beet for this recipe, but you can cook a few ahead of time to have on hand for the week

Life has changed drastically over the past year. We’ve experienced hardship and lose, we haven’t seen our family in over a year. We’ve missed out on countless experiences. But God truly has blessed us beyond measure. By the grace of God, my husband, the boys and I have remained healthy and safe. We were also blessed with the opportunity to move into an amazing house, four months into the pandemic, which instantly felt like home. While there are times I mourn our old life, I know we are exactly where we are supposed to be and I am so grateful… one year later, sipping on beet lattés, not in a cool café in the city, but in a really cool house in Central Jersey.

The more things seems to change, the more they stay the same. (Name that song…)
