Summer Pasta // Spring Pea, Asparagus, & Shrimp

This particular dish I have made twice now, so simple and amazingly delicious! Originally inspired by Cookie & Kate, I changed it up a little with a gluten free pasta and added shrimp.  This time I skipped the parmesan on top and removed the pine nuts to make this a gluten-free, dairy-free meal, nut-free meal,  but you can always add this step back it as both are equally delicious.

The thing I love about this meal is that first, it's so simple to make, and second, it's the perfect meal for summer activities as it taste good cold and can easily be carried along for a picnic.

What you'll need:

  • 1/2  pound gluten free Farfalloni pasta
  • 4 tablespoons olive oil, plus additional to toss pasta
  • 3 shallots, thinly sliced
  • 1/2 pound pencil-thin asparagus, with ends cut off
  • 2 garlic cloves, minced
  • 1 cup shelled fresh or frozen English peas
  • 2 teaspoons grated lemon zest
  • 1 tablespoon lemon juice
  • 1/2  cup chopped mixed herbs (I used rosemary and sage)
  • Sea Salt
  • Black Pepper

Directions:

Boil the pasta for 8 min, until firm, but not to soft.  Drain pasta and let cool.  Meanwhile, prep all your veggies.  Heat olive oil, then add shallots and season with a little salt and pepper, let cook till brown.  Add peas, asparagus, and garlic;  cook till peas are bright green, stirring throughout.

Add veggies to pasta along with herb mixture, lemon juice, and lemon zest; toss with olive oil.  Let cool and enjoy.

In other news... I am beyond excited to share with all of you that I have been selected to be a food contributor for MadeByGirl, one of the top Lifestyle blogs out there!  I admire Jen so much for so many reasons and can't believe she selected me to be a part of her team! Early this morning as I was catching up on my Bloglovin' feed and saw her post "New Contributors" , I was a little sad thinking I wasn't picked, since I hadn't heard from her yet... but not too disappointed in myself, since I'm still new to the blogging game.  Excited to see who was chosen, I open the post and then came to find out, she picked me!!! **screams** I still can't believe it.  My heart is seriously still beating at three times the normal rate.  I am honored to have been chosen and to be a part of not only an amazing blog, but an amazing group of girls!

This is just the beginning... Can't wait to get started!
