Smoothie // Raspberries, Peaches, Fig, & Banana

I can't tell you how excited I am that it's Friday!  It has been a world-wind of a week... I started the week off on the west coast for the 2nd week in a row, then my travel plans for work changed tenfold, really knocking me off-balance.  Everything that could go wrong, did, and sleep was something of an afterthought.  But here I am, back in NY, and ready for the weekend.  Originally I wasn't scheduled to be back until Saturday afternoon, so all in all, the craziness worked out for the better.

I still owe you this weeks pumpkin recipe, but unfortunately that will have to wait until the weekend.  I rushed home last night hoping to be able to make Pumpkin Chicken Tacos (which I did) but the sun was a little faster than me and by the time I was finished, so was daylight.  Nevertheless round two will be this weekend and I will have a special edition "Weekend Post" so stay tuned...

I do however have a lovely smoothie recipe to share with you today!  Giving you a strong finish for the week and helping you get a nice jumpstart on the weekend.  The great thing about a smoothie is that you can still continue to enjoy many of your favorite summer fruits, well into Fall as frozen is the best way to get the perfect consistency.

Ingredients:

  • 1/2 frozen organic raspberries
  • 1/2 frozen organic peaches
  • 3/4 sliced banana
  • 4 sliced figs
  • 1/2 coconut water

What to do:

  • Combine raspberries, peaches, banana, and fig in a blender or food processor
  • Blend until smooth
  • Add 1/2 coconut water
  • Blend for 30 for seconds
  • Pour contents into cup and enjoy!

**Make it sparkle with a coordinating straw, napkin, and garnished with fresh peach
