Coming up with healthy lunch options isn’t always easy. I don’t know about you, but I often find myself in a rush come lunch time and a quesadilla with spinach or PB&J it is. We love salmon around here and I love that with Blue Circle Foods Happy Fish, I can make my kids a nutritious lunch just as easily as throwing together a peanut butter and jelly sandwich (nothing against PB&J, we love those too, but #balance.
Happy Fish is cooked frozen and ready in just 4 minutes so its super easy to toss together with very little prep time. Happy Fish is also free of any antibiotics, GMOs, growth hormones, gluten, sugar and synthetic pigments.
Our current favorite way to enjoy Happy Fish is with a Happy Fish Bowl! Jayden loves to take his fish and wrap it in a piece of lettuce to make a fish taco and Jude likes to eat Happy Fish plain with his avocado and mango on the side.

What you need
Leftover brown rice
Lime Juice & Chili Lime Seasoning
Dressing of choice (we like lime cilantro)
and Happy Fish from @bluecirclefoods
Add the mango and avocado together and mix with lime juice and chili lime seasoning.
Heat grill pan on the stove and add a little avocado oil.
Cook Happy Fish from frozen, two minutes each side.
Assemble and enjoy!
