Green Monkey Smoothie // Peanut Butter, Banana, Spinach

If you haven't caught on by now, let me fill you in... I love green juices and smoothies! Not only are they delicious but they're such an easy way to incorporate more veggies into your day. What I also love about green juices and smoothies, is that the possibilities are endless and I love coming up with new recipes and of course, sharing them with you (case in point).

Today's recipe is so yummy, I can't believe I haven't shared it with you yet.  I actually made this almost a month ago, but for one reason or another the pictures got lost in the shuffle.  Nevertheless, I'm happy to be able to share them with you today.

Inspired by a Funky Monkey Smoothie, I had while in Nicaragua last year, but with spinach. I also used PB2, powered peanut butter, to still get the good fats but save on some of the calories. Give it a try, then let me know what you think.

Ingredients:

  • 3 handfuls of spinach
  • 1 banana, sliced
  • 3/4 cup almond milk
  • 1 tablespoon PB2, powered peanut butter (real peanut butter works too)
  • 1/4 teaspoon cinnamon

Directions:

  • Add spinach to food processor or blender; blend
  • Add almond milk, powered peanut butter, cinnamon, and banana; blend
  • Add additional milk if necessary, to get the consistency you prefer; blend
  • Serve cold and enjoy!
