Sorry for the mini hiatus this week... travel has really gotten to me! Somehow the week has flow by and it's already Thursday... In case you didn't know, I am in San Francisco this week for work, staying through the weekend to see family and have a little early birthday celebration.  How I lived on the west coast my whole life, beats me. Don't get me wrong, I LOVE California!  But after being a NY'er for the past 7+ years, there is something about being on the West Coast, that makes me constantly feel like I have to play catch up.  By the time I wake up in the morning, my east coast peeps are already half way through the morning... just the thought of it can be stressful! I don't know how you west coast bloggers do it...

On a brighter, yummier note, 12 Weeks of Pumpkin continues today with something super easy that you can make tonight if you so desire.  Well maybe not to tonight as you would have to head to your nearest Sprinkles Cupcake shop (or order online)... but once you receive the mix you will have yummy cupcakes in no time.

Seeing as how I am spending the week in the Golden State, I thought I was only appropriate that I share with you a little DIY you can do, recreating the iconic Sprinkles Cupcakes, originating from Beverly Hills, CA.  I picked up this mix a few weeks ago, to be honest solely based on the fact that it was pumpkin (I'm obsessed, I know).  I typically don't indulge in making boxed baked goods... mainly because I enjoy the process of baking from scratch, but I love Sprinkles Cupcakes... so this was worth a shot.

The package is a little pricey ($14 for 12 regular or 12 Mini and 6 Regular), but considering its $36 for a dozen in store, this was so worth it.  I was a little skeptical, while mixing the ingredients, but in the end they turned out wonderful!  The pumpkin flavor was delicious and tasted like I made them from fresh pumpkin puree.  I highly recommended this mix and will for sure be using it again.  It even included a recipe for homemade frosting (which was super easy to make) and the iconic dots to add to the top of your cupcakes, giving them a professional look.

Sprinkles Pumpkin Cupcake Mix Sprinkles is one of my favorite cupcake places and now I can recreate them at home in a matter of minutes.  I highly recommend making minis, as I did... trust me there is a whole lot less guilt involved when eating a mini treat.
